As one of the three essential elements (the water temperature, the soaking time, the quantity of tea to be put into a teapot/Gaiwan) for making tea, the quantity of tea to be put into a Gaiwan determines the concentration and coordination performance of tea infusion and has a great influence on the taste.
When we make tea with a Gaiwan, the quantity of green tea to be put into is generally 3 grams, and the quantity of black tea is generally 5 grams. The approximate quantity is equivalent to putting tea to cover the bottom of the Gaiwan and then to be a little higher than the bottom of the tureen.
If it is Longjing (Dragonwell Green Tea) which belongs to flat tea, and Qi Men Hong Cha/Keemun Gong Fu Black Tea which is a relatively short and broken, with small volume, the tea just need to cover the bottom of the Gaiwan.
The quantity of white tea (White Tea Silver Needle, White Peony/Bai Mu Dan White Tea, Shoumei/Longevity Brow White Tea, Gongmei/Tribute Eyebrow White Tea, etc.) to be put into a Gaiwan is generally 5 grams (the same as green tea and black tea), and the quantity of oolong tea (Da Hong Pao/Big Red Robe Oolong Tea, Tieguanyin/The Iron Goddess Buddha Bodhisattva of Mercy Oolong Tea, Phoenix Dan Cong Oolong Tea, etc.) is generally 8 grams.
White tea leaves are relatively fluffy and small in specific gravity. For such kind of fluffy loose tea, the tureen should just be filled with the tea(see the picture above).
It will be much more different among oolong tea, wherein strip-shaped oolong tea should be put enough to cover more than half of the tureen, and granular oolong tea should be put enough to cover 1/4 of the Gaiwan.
If it is compressed tea (Cooked/Ripe/Shou Pu-Erh Tea Cake, White Tea Cake, etc.), because of the reduction of its volume, do not put too much tea into a Gaiwan, about half less than loose tea(Cooked/Ripe/Shou Pu-Erh Tea, etc.).
Above are some common examples, suitable for most people's taste. If you feel it not strong enough, just properly put more tea.
